whats on the menu 1/11/2012
Breakfast: Green Monster Smoothie inspired by this Joy the Baker smoothie, with brown rice protein powder and ground flax seeds thrown in the mix.
Lunch: leftover vegan cream of mushroom soup (also a la Joy the Baker) and a small salad with spinach, red cabbage, orange bell pepper and a small tomato with spiced white balsamic vinegar and just a touch of olive oil.
Afternoon/Pre-workout Snacks: orange, Sing Buri Cashews, Pecan Pie Larabar.
Dinner: Something involving: sweet potato, lentils and possibly a quinoa and brown rice mixture. Really craving something on a bun, so maybe I will just try to make patties out of the ingredients listed above … I will be sure to update later and try to include a photo or two.

new year, new resolve
so after the demise of my holiday run streak, the holidays got the best of me. but it is 2012 now and I seem to have a new resolve. training season has begun (the USA Rock n’ Roll Half Marathon is coming up on March 17), I snagged a whole month of yoga classes for $10 thanks to a gift card I received for x-mas and thanks to the documentary forks over knives I have decided that for the most part I’m going to eat much like a vegan (but lets face it meat and cheese taste awesome so I’m not completely giving them up. I’m pretty sure I’d pick bacon and brie over a cookie any day.)

Lunch at the desk: apple, pear, beet and spinach juice with some spicy tuna & salmon roll from the local food co-op

day 18 didn’t happen
Sorry!! My “streak” has ended. My Sunday just got too filled up and hectic with holiday shopping, football and a Christmas dinner that a run was just not in the cards. So my #rwrunstreak challenge will not be 100% complete. However, I think, at least for me its OK. My calves needed the rest and obviously I’m not going to completely give up and not run anymore from now until New Years. 17 days of running in a row is still one heck of a streak for a rookie and a few miles that probably wouldn’t have happened at all. So I will still be keeping track of my remaining holiday season runs. Squeezing in those miles here and there has felt really great and I know it will continue to help keep the stress levels down during this hectic season.

White bean and kale soup with leftover turkey from this past weekend’s “secondgiving” for #lunch today. The version I threw together last night was based off of this recipe http://www.eatliverun.com/kale-and-white-bean-soup-with-golden-beets-and-spicy-sausage/
My ingredients were:
- minced garlic
- carrots
- celery
- white beans
- kale
- leftover roasted turkey
- low sodium veggie broth (it was on sale)
- thyme
- crushed red chili flakes
- salt & pepper
But lots of other veggies, herbs and proteins would work great with the white bean, kale, broth base. Mix it up!

#rwrunstreak day 13
The weather almost got me (almost) luckily its still getting close to 60 degrees these days even though it’s December 6. Actually that is pretty weird. But a little rain never hurt anyone so 1.3 miles was accomplished.
